Japanese Green Tea
Kabusecha, or ‘shaded tea’, is produced in limited quantities from Yabukite cultivar bushes kept in the shade for 7-10 days before harvesting, exactly as is done for Gyokuro or Tencha, but for fewer days. This limits chlorophyll photosynthesis and increases the content of pigments and L-Theanine amino acid in the tea leaves, contributing to the sweet and umami taste. A very pleasant, fragrant tea that reveals new aromas with every sip. Excellent when prepared with repeated short infusions in a traditional teapot with a side handle, and also when drunk cold, prepared using the Koridashi method, with slow infusion in ice.
Recommended with rice, sushi, wagashi (Japanese sweets), lemon biscuits, goat's cheese
