3 gr x 200 cc. of water at a temperature of 85°C. Infusion time: 2 minutes.

Semi-Oxidized Tea (China)

Bai Hao Oolong, also known as Oriental Beauty or Dong Fang Mei Ren, is truly a unique tea. Before being harvested by hand, the tea leaves must be attacked and bitten by a microscopic green grasshopper, the Jacobiasca Formosana, which only occurs between June and July. The insect bites trigger a chemical process in the tea leaves that eventually leads to the characteristic smooth taste with notes of ripe fruit and honey. If these little insects do not visit the plantation, which uses no chemicals, this tea cannot be produced. Tea lovers around the world understand this and therefore strongly appreciate every cup and every sip of this precious tea.

Recommended with cheese (brie, camembert), cherries, raspberries, madeleines. Some people pair it with chocolate sprinkled with salt.
