Types of tea

Tea is made through the processing of Camellia Sinensis, an evergreen plant of the Camelliae family, which grows all over the world in tropical and subtropical climates. There are two principal varieties, Sinensis and Assamica and numerous cultivars. The main producer countries are India, China, Sri Lanka and Kenya, but the tea plant is also cultivated in Turkey, Japan, Nepal, Indonesia and even in South America and Oceania. The tea plants yield appreciable harvests from the age of 3-5 years, and are repeatedly pruned to a height of 1.20-1.50 m to create what is called the “plucking table”. The differences between the various types of tea are due to climate, altitude and the varieties involved and, above all, to the processing. The main types are as follows:
green tea, black tea, semi-fermented or oolong tea, white tea, post-fermented tea, pressed tea scented tea, flavoured tea and blends.

GREEN TEA

GREEN TEA

The just-harvested tea leaves are left to shrivel, preferably in the open air, so that they lose part of their water content. They are then subjected to a process of stabilisation through the heat of a fire, being baked briefly in large pans or using steam (this method is used above all in Japan). This process serves to prevent oxidation and to maintain the colour, fragrance and characteristic chemical composition of the green tea. After this the leaves are processed in the various forms (rolling and shaping) and finally thoroughly dried out in special ventilated ovens (drying). RECOMMENDATION: drink pure or with a touch of sugar or honey. PREPARATION: 2.5/3 g in 150 cc of mineral water at a temperature of 80° C. For certain Japanese green teas, the temperature should be lowered further. Infusion time ranges from 2 to 5/6 minutes.

BLACK TEA

BLACK TEA

After the initial wilting, the natural process of fermentation is increased by rolling. Machines are used to crush and break the ribs so that the cellular liquid emerges and, in contact with the air, generates the oxidation phase which causes the change in colour of the leaves, the pungent and penetrating aroma characteristic of black tea and a partial oxidation of the polyphenols. This phase, in which the characteristic apple smell is unleashed, takes place in a cold and damp place in order to facilitate the fermentation, and lasts from 4 to 5 hours. The process is then blocked by drying, generally performed over a live flame or in ventilated ovens, followed by selection by grade. RECOMMENDATION: drink pure or with a touch of sugar or honey. It can take a dash of milk. PREPARATION: 2.5 g in 150 cc of mineral water at a temperature of 90° C. Leave in infusion from 3 to 5 minutes.

SEMI-FERMENTED TEA

SEMI-FERMENTED TEA

The processing of semi-fermented or oolong tea is mid-way between that of green tea and black tea. The initial phase of wilting, in the open air, is followed by partial rolling in which only the edges of the leaves are bruised. The oxidation process is shorter than that of black tea and entails only slight modifications of the chemical components. The product is then stabilised by final drying. RECOMMENDATION: drink pure or with a touch of sugar or honey. PREPARATION: approximately 3/4 g in 150 cc of mineral water at a temperature of 90° C. Leave in infusion from 5 to 6 minutes.

WHITE TEA

WHITE TEA

Made from the plucking of spring tip buds, or from the harvesting of the buds and the top two tender leaves, it is subjected simply to a process of drying in the open air, or to a brief steam processing. This is followed by a second drying in ventilated ovens. It is known as white on account of the downy buds and the very pale colour of the infusion. It is undoubtedly one of the most prized varieties of tea (in the past it was reserved for the Emperor alone) and the harvest is very limited. RECOMMENDATION: drink pure without sugar or honey. PREPARATION: 4 g in 150 cc of mineral water at a temperature of 80° C. Leave in infusion for 8/10 minutes.

POST-FERMENTED TEA

POST-FERMENTED TEA

Known as Pu erh tea, this is a Chinese speciality. After being left to wilt in the open air the tea leaves are stabilised using heat then rolled, fermented and left to rest. This is generally followed by drying. It is known as post-fermented because the microbial fermentation, which takes place in moist conditions under cover, is followed by an initial toasting which prevents enzymatic fermentation. Much appreciated for its moist wood aroma, in China it is considered a tea of curative properties. RECOMMENDATION: drink pure or with a touch of sugar or honey. Temperature: 90° C. PREPARATION: 3 g in 150 cc of mineral water at a temperature of 90° C.

PRESSED TEA

PRESSED TEA

These are green, black, post-fermented or scented teas that are placed in moulds of various forms and subjected to steam processing before the final drying. Among the most characteristic shapes are the "tuo cha" nests, large or small, and the Tea Bricks, in the form of richly-decorated tile or brick shapes. PREPARATION: crumble or grate an amount corresponding to about 3 g per person, leave in infusion in mineral water at a temperature of 85/90° C until the compressed tea leaves open.

SCENTED TEA

SCENTED TEA

The scented teas, a unique speciality of China, are made from tea leaves blended directly with the flowers during the processing phases. The most famous are undoubtedly jasmine and rose, blended several times with the flowers harvested when they are at their most fragrant, followed by a cooling phase that fixes the perfume, and the final drying. RECOMMENDATION: drink pure or with a touch of sugar. Also excellent cold. PREPARATION: as per the category of the base tea.

FLAVOURED TEA AND BLENDS

These are European products, made by blending various types of tea, citrus fruit rinds, flower petals, dried fruits and aromas. The tea-blender is the jealous custodian of their secret recipes and masterfully interprets the constantly evolving tastes of the consumers. RECOMMENDATION: drink pure or with a touch of sugar or honey. PREPARATION: depending on the base tea. On average 2.5 g in 150 cc of mineral water at a temperature of 80/90° C.

The communication of your credit card number over internet, using the online payment system of Banca Sella, is absolutely safe.
At the end of the order procedure a link will open on a secure channel (through an SSL connection based on 128-bit encryption) showing the webpage of Banca Sella, which is the only bank authorised by the La Via del Tè online Shop for the management of credit card payments on its website.
The secure Banca Sella webpage that is shown includes:
- the amount of the order;
- the fields to be completed: type of credit card, credit card number and expiry date;
- a button to cancel or confirm the payment.
All you have to do now is fill in the fields and confirm the payment by sending the credit card details to Banca Sella – in an encrypted and hence secure manner. The bank will then process the data (authorisation and accounting phases) and a new page will be shown indicating the outcome of the transaction. For the customer’s security, the credit card number is never communicated even to La Via del Tè, but is forwarded only to the banks that have to provide the authorisation, the outcome of which is then transmitted to us. Consequently no details relating to your credit card will appear on the documents connected with the order, or will be memorised in our systems or in those of the express carrier.

All deliveries are made by Corriere Bartolini, and deliveries to mailbox addresses cannot be accepted.

Art. 1 – Conclusion of the contract

The order submitted to the La Via del Tè online Shop must be completed in full and must contain the elements necessary for the identification of the Customer and the products ordered, as well as details of the delivery address, on pain of invalidity. The Via del Tè online Shop will send to the Customer an e-mail confirming receipt of the order and containing a reference to the applicable sales conditions.

Art. 2 – Availability and delivery

The La Via del Tè online Shop undertakes to accept orders within the limits of the stocks of goods available. In particular circumstances, the La Via del Tè online Shop may not be in a position to ensure the availability of all the products on offer, and hence cannot be considered liable for the temporary unavailability of one or more products. The submission of the order by the Customer is deemed valid also as acceptance of a possible partial delivery, restricted to the products available among those that have been ordered, and also as a waiver of any claim for compensation and/or indemnity under such entitlement. The La Via del Tè online Shop undertakes, moreover, pursuant to the law, to inform the Customer promptly of the non-availability of the ordered product. (i) If, despite the care we take to prevent this, upon payment confirmation the ordered product should prove to be temporarily unavailable, the La Via del Tè online Shop reserves the right to suggest an article of equivalent quality and price, without charging any additional costs to the customer. Art. 3 – Right to withdraw

As laid down in Legislative Decree no. 185 of 22 May 1999, the Customer is entitled to withdraw from the contract in integrity and good faith, without any penalty and without specifying the reason thereof, within 10 days from the receipt of the merchandise, subject to written communication to be forwarded to: SNAK srl-La Via del Tè, Via Ponte a Iozzi, 8/1 Loc. Cascine del Riccio 50023 FIRENZE. In this communication the Customer must indicate the product or products for which he or she intends to exercise the right to withdraw. In accordance with the law, the La Via del Tè online Shop shall then proceed, at its own responsibility and expense – and in the manner and terms agreed in advance with the Customer, saving the waiver of the latter – to the refund of the amount paid or to replacement with another product. The written communication, sent by registered letter, must contain: • Indication of the desire to take advantage of the faculty as prescribed by the legislation in force. • Details of the purchased product. • Copy of the original sales letter which should be in your possession. • In the case of partial withdrawal, the code/s of the article/s. • Details of the bank co-ordinates of the account for the credit transfer (Customer’s IBAN code and current account number). The only costs that will be requested are those for shipping. The right to withdraw applies only to merchandise that is intact at the time of return.

Art. 4 – Return of damaged merchandise

In the event of delivery of an article that has been damaged in transit, the Customer does not suffer the consequences, since all the goods travel at our risk. In the event of merchandise that arrives damaged, therefore, we would kindly ask customers to help us to improve the service by accepting the packages conditionally, subject to checking.

Art. 5 – Prices and methods of payment

The prices indicated on the website ww.laviadelte.it in the La Via del Tè online Shop section are in Euro and are inclusive of VAT. Shipping costs are excluded. The prices applied are those indicated on the site at the time of order by the Customer. The prices of the individual products are subject to change, so that the prices indicated on the site at any time cancel and replace those previously indicated. ***The price of the purchased products together with the costs for delivery must be paid by the Customer at the time of the online order via credit card. The fiscal documentation will be issued by SNAK srl at the time of delivery.***

Art. 6 – Guarantees and liability

SNAK srl – La Via del Tè, within the limits of availability as specified above, guarantees that the products delivered will be equivalent to those indicated and described on the website. SNAK srl guarantees compliance with all the regulations governing storage and conservation of the products up to the time of delivery to the address indicated in the order. The liability of the manufacturer holds for all the products sold. In the case of packaged products, the manufacturer is also liable for the truthfulness and completeness of the details provided on the packaging. The images present on the website are provided to facilitate the Customer’s recognition of the products; however these photos may not always accurately reflect the appearance of the product delivered, as a result of changes in the packaging made by the manufacturer.

Art. 7 – Disputes and applicable law

Any disputes that may arise regarding the application, performance and interpretation of the distance sales contracts are submitted to Italian jurisdiction, and the Court of Florence shall have competence. The distance sales contracts with SNAK srl are regulated by Italian law and for all that is not expressly specified the relevant legislation applies.
